  • 6 eggs
  • 1/4 cup sugar
  • 1 quart milk
  • 1 teaspoon vanilla
In a large saucepan, beat together the eggs and sugar. Stir in two cups of milk, and cook over low heat stirring constantly until the mixture thickens and reaches 160 degrees Fahrenheit. (The proper consistency can be tested by dipping a spoon in?the mixture should coat the surface of the spoon with a thin film.) Remove from heat, and stir in the rest of the milk and the vanilla.

Cover the mixture, and place it in the refrigerator overnight. Pour into a bowl or a pitcher, and serve immediately.

Chocolate eggnog

This recipe is for the chocolate lover in the family.

Ingredients

  • 1 cup milk
  • 1-1/2 cups of chocolate milk
  • 5 eggs
  • 1/4 cup packed brown sugar
  • 1/2 cup whipping cream
  • 1/2 cup Kahlua (optional) or strong coffee
  • 1/2 cup dark rum (optional)
  • 1/2 teaspoon ground cinnamon
Combine milk and chocolate milk in a saucepan, and scald (do not boil). In a separate bowl, beat the eggs and sugar together until thick. Add approximately 1/2 cup of the hot milk mixture, and mix through. Add the milk and eggs to the rest of the milk, and place over low heat.

Add whipping cream and Kahlua, cooking and stirring until the mixture thickens. Do not boil. Remove from heat, and add rum and cinnamon. Let cool, and refrigerate until chilled. Serve and enjoy! ~ Decadent eggnog

  • 2 quarts whole milk

  • 1 pinch ground nutmeg
  • 1 cup whipped cream
In a large saucepan, stir together sugar and flour. Slowly stir in the milk, and bring to a boil over medium heat. In a small bowl, whisk the egg yolks until smooth. Ladle a small amount of the hot milk mixture into the eggs, and quickly whisk together. Pour the yolk mixture back into the milk and cook, stirring constantly until the mixture boils. Remove from heat, and allow it to cool.

In a medium sized bowl, beat egg whites until foamy. Gradually add the four teaspoons of sugar, and continue to beat until the peaks become stiff. Place egg white mixture into the eggnog, and refrigerate until chilled. Serve garnished with whipped cream and a pinch of nutmeg. Yum!
