Great soup recipes you can make with ease

Everyone loves soup and everyone loves home made soup even more.  It’s a simple fact of life.  It’s easy to open up a can from the supermarket aisle, but sometimes you want to create something yourself from scratch.

There are plenty of free online recipes out there for you to choose from, but here are just a few of my own creation to get you started.  The following easy soup recipes prove that you can make something unique without spending all day at it.

Quick N’ Easy Chicken Soup

4 cups water
1 chicken breast, pre-cooked
1 chicken bouillon cube
2 cups minute rice, prepared
1 tsp oregano

This is just about as easy as it gets.  Bring the water to a boil and add the bouillon cube.  While waiting on that, cut a cooked chicken breast into small pieces (start off by cutting it in strips roughly as big around as thick french fries, then cut the strips into squares).  Also cook up two cups of minute rice.  Once the bouillon cube is fully dissolved, add the rice, the chicken and the oregano.  Allow to boil for five more minutes and serve.  Feel free to add simple ingredients like chopped carrot, onion or garlic and to experiment with different spices to make it more interesting.  Curry is a good one to try to add a bit of character.

French Onion Soup

6 cups water
6 sweet onions, sliced
2 chicken bouillon cubes
2 beef bouillon cubes
mozzarella cheese slices
butter
garlic salt

cook up sweet onions in butter until soft (think floppy).  Preheat oven to 400 degrees.  Bring water to a boil and add all four bouillon cubes.  Stir and allow to cubes to dissolve.  Add the onions and then add garlic salt to taste.  Remove from heat and pour into soup mugs to the very top.  Add slice of mozzarella cheese to top.   Place mugs on a tray and carefully place in oven.  Allow mozzarella to melt over the top of the mug and slightly brown on the four corners.  This won’t take long, so don’t walk away from it.  Remove from oven and serve.  If you want to make a creamy version of this soup, add four slices of  white American cheese or muenster to the soup while boiling and stir until the cheese is completely melted. Still use the mozzarella slices on top, but not to add creaminess.

Veggie Soup

6 cups water
2 chicken bouillon cubes
3 diced tomatoes
1/4 head of broccoli
1/4 head of cauliflower
1 yellow hook neck squash
1 green zucchini
4 carrots, sliced
1 clove garlic minced (or 1 tsp pre-minced garlic)
1 tsp basil
1 tsp oregano
1/2 tsp dill weed

The hardest part about this recipe is getting all of the stuff at the store.  Once you have it, this goes fairly quickly.  Chop all of the vegetables finely (carrots can be sliced or chopped).  Bring the water to a boil and add all the ingredients except for the basil, oregano and dill weed.  Simmer for a half hour and then add the three spices.  The beauty of this recipe is that if there’s some type of veggie or spice that you just love or hate (or are allergic to), it’s very easy to remove or add ingredients as you see fit.

These are just three of the many, many easy soup recipes out there.  They aren’t difficult to make, but will impress both family and friends far more than opening a can.
