Now boil 2 cups of apple cider vinegar in a large pot, along with 1 tbsp. each of salt and pepper, 1 ® cup of light brown sugar, three cloves of sliced garlic, ® cup of sliced ginger and 1 ® tsp. each of red pepper flakes and mustard seed. Pour the brine over the rhubarb and refrigerate overnight.

Drain the rhubarb and save ® cup of the brine. Slice one head of cabbage and carrot, and mix it all together with the rhubarb, brine, 2 tbsp. Of olive oil and salt and pepper to taste. Place it in the fridge until the cabbage and soft and get ready to dive in.
