Desserts that are vegetarian will be a hit at any party

Vegetarian desserts are a great alternative to high calorie, sugar filled desserts.  Not only are vegetarian desserts low in fat, but they are figure friendly.  You’ll be able to “whip” up these tasty desserts without all of the fuss because they are quick and easy!

To make your vegetarian desserts, make sure your kitchen is stocked with a variety of kitchen bakeware and cookware such as measuring cups, baking dishes, and mixing bowls.  It’s good to have a bread pan, pie dish, and a muffin pan in your cupboards.  You never know when you’ll be asked to bring something to a party.

Recipes for Vegetarian Desserts

Pineapple Upside Down Dump Cake

Prep time = 2 minutes
Cook time = 25 minutes

Ingredients
1 can crushed pineapple, undrained (20 oz)
1 can fruit pie filling (cherry or blueberry or your choice, 20 oz)
1 box yellow cake mix**
1/2 cup vegan margarine, softened
2 tbsp brown sugar (optional)
1/4 cup chopped walnuts or pecans (optional)
 ** to make this Vegan, purchase Duncan Hines Vegan cake mix

Preparation
Dump the pineapple, followed by the pie filling into a greased pan.  Put the cake mix on top of the ingredients.  Dribble or crumble vegan margarine on top of the cake mix.  Sprinkle with nuts and brown sugar (optional).

Bake the cake according to directions on the box.  No frosting is necessary! 

Apple Crisp

Prep time = 20 minutes
Cook time = 30 to 35 minutes

Ingredients
5 or 6 apples
3/4 cup pure maple syrup
cinnamon to taste
1/2 cup whole-wheat flour
1/2 cup oatmeal
1/2 cup applesauce
1/2 cup brown sugar

Preparation
Preheat oven to 350 degrees

Chop the apples and put them in an 8″ x 8″ baking pan (lightly oiled).  Drizzle the maple syrup and sprinkle the cinnamon over the apples.
 
Mix the flour and oatmeal in a bowl.  Add the applesauce and brown sugar.  Mix ingredients until the flour is moistened.

Cover the apples with the oatmeal mixture.  Bake 30 to 35 minutes and serve warm.

Chewy Fudge Brownies

Prep Time = 10 minutes
Cook Time = 20 to 30 minutes
Makes 20 brownies

Ingredients
1 teaspoon baking powder
1/2 cup cocoa powder
 2 cups flour
1/2 teaspoon salt
2 cups sugar
1 cup oil
1 teaspoon vanilla
1 cup water
1 cup dairy-free chocolate chips (optional)
1/2 cup chopped walnuts (optional)

Preparation
Preheat oven to 350 degrees

In a mixing bowl, combine the dry ingredients, and then stir in the wet ingredients.  Add chocolate chips and/or chopped walnuts to the mix (if desired).

Pour mixture into a greased 9″ x 13″ baking pan, and bake for 20 to 30 minutes. (Moister brownies, bake 20 to 25 minutes.)

Allow the brownies to cool slightly before serving.

Apple Enchiladas

Prep Time = 10 minutes
Cook Time = 30 minutes
Serves 4 to 8 people

Ingredients
8 small tortillas
2 cans apple pie filling
2 sticks soy margarine
1 cup unrefined sugar
1 tablespoon cinnamon

Preparation
Preheat oven to 350 degrees

Place 1/4 of a the apple pie filling in a line down the center of each tortilla.  Wrap each tortilla tightly.  Place the wraps in a 9″ x 13″ glass baking dish.

Melt the soy margarine over medium heat then add the sugar and cinnamon.  Simmer the mixture over reduced heat until the sugar has completely dissolved, stirring constantly.  Pour the cinnamon sugar topping evenly over the wraps.

Bake the wraps for 30 minutes, until the edges are lightly browned and beginning to crisp.

Chocolate Tofu Pie

Prep Time = 7 minutes
Cook Time = 2 hours (chilled in refrigerator)
Serves 4 to 8 people

Ingredients
1 12-ounce bag non-dairy chocolate chips (about 2 cups)
1 8- or 10-ounce package of soft silken tofu
1 tablespoon vanilla extract
1 vegan graham cracker crust, such as Keebler?s Graham Cracker Ready Crust
1 cup sliced strawberries or whole berries (optional topping)

Preparation
Melt the chocolate chips in a saucepan, microwave, or double boiler.

Blend the silken tofu in a food processor or high-blender, until creamy.  Add the melted chocolate chips and vanilla extract to the mixture, blending well.

Pour the filling into a graham cracker crust, top with fresh fruit such as blueberries or strawberries (if desired).  Refrigerate for 2 hours.

Make sure to use the freshest ingredients.  Purchase organic foods, but make sure to read the label because not all organic foods are created equally.  Look for labels such as 100% Organic, Made with Organic
Ingredients, and Organic.
